Each release of this beer is a blend of barrels from each previous batch each fermented using our constantly evolving house culture, similar to a Sherry Solera system. Blending the beer adds complexity and depth over time. The humble, delicate, floral Saison we put into barrel, through the blending process, becomes a nuanced, multi-level beer, adding levels of green apples and ripe pear, honeyed sweet apricots, hints of white pepper spice and sourdough tartness that finishes with a fresh earthiness and pencil shaving bitterness, that is so much more than the sum of its parts.
